Salmon en Papillote with Fresh Vegetables
Ingredients:
Samon, skin off...4-5 oz per person
Fresh julienne veg. of choice: bell pepper, carrot, zuc., summer squash
Sliced mushrooms
Fresh dill
Lemon slice
salt and pepper
white wine
Instructions:
Cut heart shape from full sheet of folded in half parchment paper.
Pan spray and set salmon in middle of half heart.
Layer on veg, salt and pepper, lemon, dill then wine.
Start at top and fold over every inch, twisting under at the tail.
Place on sheet pan and bake 425 for 12-15 minutes.
Slide onto plate and cautiously cut on "x" to allow stream out.
Servce with rice or couscous and salad.
